Milk Protein Concentrate (MPC) is a dairy ingredient produced from skim milk that contains both casein and whey proteins in the same ratio as in natural milk, with protein content ranging from 42% to 85%. It is highly valued for its nutritional and functional properties in various food applications. 

Composition and Types
MPC is produced primarily through ultrafiltration and diafiltration processes, which remove a significant portion of the water, lactose, and soluble minerals while retaining the proteins in their native form. The final product is a powder with a high protein-to-lactose ratio compared to traditional milk powders. 
MPCs are classified based on their protein content in dry matter: 
Low-protein powder: Contains ≤ 40% protein (e.g., MPC 40, MPC 42).
Medium-protein powder: Contains 60-70% protein (e.g., MPC 56, MPC 70).
High-protein powder: Contains ≥ 80% protein (e.g., MPC 80, MPC 85). Milk protein isolate (MPI) is a top-tier form with a minimum of 90% protein.
