3. Key Characteristics and Types
Heat Treatments: SMP is categorized by heat treatment (Low, Medium, or High Heat), which affects its solubility and functionality. Low-heat is preferred for cheese; high-heat is suited for bakery and confectionery.
Composition: Typically contains less than 1.5% fat, 50-52% lactose, and 34-37% protein.
Shelf Life: It can be stored for 18–24 months in cool, dry conditions.
Skim milk powder is also sometimes used in humanitarian aid scenarios to provide a nutritious substitute for liquid milk.
