Peanut oil is a staple in many global cuisines, especially American, Chinese, South Asian, and Southeast Asian, due to its performance under high heat. 
High Smoke Point: Refined peanut oil has a high smoke point of around 232°C (450°F), making it an excellent and stable choice for deep-frying and stir-frying without breaking down or burning.
Flavor Profile: While some refined peanut oils have a neutral or mild flavor, those made from roasted peanuts (often labeled as “gourmet” or “unrefined”) have a stronger, rich, nutty aroma that enhances specific dishes like curries, marinades, and dressings.
Health Benefits: It is a heart-healthy choice as it is naturally cholesterol-free and rich in monounsaturated and polyunsaturated fats (like oleic and linoleic acids) that help manage cholesterol levels.
Versatility: It can be used for general cooking, baking (as a substitute for butter), grilling, and as a finishing oil, depending on the type. 

Types of Peanut Oil
The processing method significantly affects the oil’s properties, flavour, and nutritional content. 
Refined Peanut Oil: This is the most common type for general cooking. The refining process removes most of the natural flavor, aroma, and potential allergens, resulting in a clear oil with a very high smoke point.
Unrefined (Cold-Pressed) Peanut Oil: This oil is extracted using low-heat methods to retain more natural nutrients, antioxidants, and a strong, authentic peanut flavor. It has a lower smoke point and is best used for dressings, marinades, or light sautéing.
Roasted Peanut Oil: Considered a specialty oil, this is typically unrefined and made from roasted peanuts, giving it a bold, intense flavor used primarily as a finishing oil or flavor enhancer in dishes.
